What will you learn?

Food Science and Technology covers the biological, chemical and physical properties of food, and how those properties are applied in the production, preservation and quality assurance of food products. You study nutrition, food microbiology, sensory analysis, food chemistry and engineering principles, building an understanding of how food moves from raw ingredient to finished product on a supermarket shelf. Practical laboratory sessions are a central part of every week, alongside lectures and tutorials, and most programmes include a substantial industry placement of six months to a year with Irish food companies such as Kerry Group, Glanbia or Aryzta. Some programmes offer Erasmus+ exchange opportunities in continental Europe. By graduation you are equipped to work across product development, quality control, regulatory compliance and food safety roles.

Required Education

Entry is through the CAO and typically requires a minimum of six subjects in the Leaving Certificate, including English and Mathematics. Higher-level Chemistry or Biology is strongly recommended and may be required by some institutions; Higher-level Mathematics is an advantage. CAO points for Food Science and Technology at university level are generally moderate, while places at technological universities may be somewhat less competitive. QQI FET Level 5 or Level 6 awards in Science, Applied Science or Laboratory Techniques provide a recognised progression route into Level 7 programmes, from which you can transfer to Level 8 with strong results. Mature applicants (aged 23 or over) may apply directly through the mature student CAO stream, and HEAR and DARE access routes are available at participating institutions.

Career Prospects

Ireland's agri-food sector is one of the country's most significant indigenous industries, generating substantial export revenue, which means consistent demand for skilled food science graduates. Employment rates for graduates of this discipline are strong, and graduates often secure positions before or shortly after completing their final year placement. Starting salaries typically range from approximately €28,000 to €35,000 gross per annum, rising to €45,000–€65,000 or more at senior technical or management level. International opportunities are also good, particularly within Europe and North America, given the global reach of Irish food multinationals.

Impact of AI on this program

Artificial intelligence is increasingly being applied in food manufacturing for predictive quality control, automated defect detection on production lines and optimisation of food formulation processes. As a food science graduate, you will encounter AI-driven tools for data analysis in safety testing, shelf-life modelling and supply chain management. While AI automates routine data tasks, the sensory, regulatory and creative dimensions of food science still rely heavily on human expertise and judgement. Graduates who are comfortable working with data analytics platforms and AI-assisted laboratory systems will be at a clear advantage in the job market.
